Sanitise names from the Teachable Webhook that have email addresses instead of names

While doing prelaunch tests with StudyForFE a student signed up to a free course using an email address as their name. Let's ensure we sanitise this by using the piece before the @ sign as the first and last name. - origin: [GitHub](https://github.com/Ellf/witness/issues/30)
